Filet Mignon & Béarnaise with Haricots Verts, Green Tomatoes, and Mushrooms

Ingredients

2-6 oz filets

2 cups haricot verts (green beans)

1 cup baby bella mushrooms

1 green tomato (diced)

2 sticks unsalted butter

3 tablespoon minced shallots

2 tablespoons white wine vinegar

2 large egg yolks

2 tablespoons fresh lemon juice

1 tablespoon finely chopped fresh tarragon

1 cup heavy cream

For sauce

Melt butter in a medium pan, whisk in shallots, white wine vinegar, egg yolks, heavy cream and lemon juice. Season with tarragon, salt and pepper. Let simmer on low for 7 min.

For the filet

Set grill to a medium-high heat. Add filets that are salted and peppered. For perfect grill marks, after 3 minutes turn your steak 90° and then let's sit back down for another 3 minutes. Flip once after a total of about 6 minutes. Remove from grill and let rest.

For vegetables

Melt butter in a large skillet over medium-high heat. Add haricot verts and mushrooms. Cook 6 minutes or until tender. Add diced green tomatoes and vinegar. Sprinkle vegetable mixture evenly with salt and pepper to taste.
