Wake and Bake! Easy Breakfast Skillet Bake
Wake up to this delicious Sausage, Potato, and Egg Skillet Bake, topped with cherry tomatoes and parsley. This makes a wonderful weekend breakfast or brunch treat for a family that enjoys a hearty meal.
Skillet Eggs with Italian Sausage Hash
Ingredients
6 Sliced Italian bread
1 Link of Italian sausage
1 Potato (minced)
4 Fresh Eggs
4 Cherry tomatoes
1 Tsp. Fresh Parsley
1/2 cup onion
Pre-heat a skillet or cast iron skillet to medium.
While the skillet is pre-heating. Cube the potatoes.
Add a tablespoon of olive oil to the skillet and add the cooked potatoes and onions. Stir frequently for 4-5 minutes, until vegetables are soft. Take out and put to the side.
Add the breakfast sausage and cook until no longer pink. Add sausage to the potato and onion mixture.
Put Italian bread on skillet and grease with extra olive oil. Add sausage and potato mixture on top and crack the eggs directly onto the skillet. The eggs will take about 5-7 minutes to fully set. If you prefer you can place the pan in a 350 degree oven for 5 additional minutes to help set the tops of the eggs.
Garnish with parsley and cherry tomatoes
Add additional salt and pepper, to taste.
