Stuffed Tomato with Gulf Shrimp
Ingredients
1/3 pound boiled gulf shrimp 1 stalk celery, diced 1/4 cup minced fresh basil 1 shallot, minced
12 slices of cucumber 2 tablespoons mayonnaise 1 tablespoon white wine vinegar Salt and Pepper to taste 4 large tomatoes
Preparation
Combine shrimp, celery, shallots, mayonnaise, basil, cucumber, vinegar, and pepper in a medium bowl. Set aside. Carefully hollow out the inside of each tomato using a melon baller or small spoon. Fill each tomato with the shrimp mixture. Serves up to 4.
