Farm-to-Table Berkshire Ribs

EATING LOCAL! Today, courteous of Heritage Farms and City Grocery, we had the pleasure of smoking local Berkshire ribs. A Berkshire pig is a rare breed of pig originating from the English settlement of Berkshire. They also have the oldest recorded purebred swine pedigree history in the U.S., dating back to 1875. And boy are they tasty! Here is a simple BBQ ribs recipe to ensure that you are the ultimate pit master.

Ingredients:

  • 2 1/2 pounds Berkshire ribs

  • 1 tablespoon garlic powder

  • 1 tablespoon brown sugar

  • 1 teaspoon ground black pepper

  • 2 tablespoons salt

  • 1 cup barbeque sauce

How to Prepare:

  1. Place ribs in a large pot with enough water to cover. Season with garlic powder, black pepper and salt. Bring water to a boil, and cook ribs until tender.

  2. Preheat oven to 325 degrees F.

  3. Remove ribs from pot, and place them in a 9x13 inch baking dish. Pour barbeque sauce over ribs. Cover dish with aluminum foil, and bake in the preheated oven for 1 to 1 1/2 hours, or until internal temperature of pork has reached 160 degrees F.

Rotate steak 90 degrees  after 3 minutes to achieve perfect grill marks.
